Banana Performance Cheesecake


  • 2 medium sized bananas
  • 1/3 cup of coconut milk
  • 6 ice cubes
  • 1/3 cup cacao powder
  • 1/4 cup coconut oil
  • 2 tablespoons of rice malt syrup or honey


  1. Put the bananas, ice cubes and coconut milk into a blender, blend until smooth
  2. Oil up a muffin tray with coconut oil
  3. Pour the banana mix into muffin trays, ensuring the mix is about half way full, chuck in the freezer
  4. Get a pot of boiling water going on the element, keep it boiling
  5. Get a metal bowl, place it on top of the boiling water and start melting together the cacao, coconut oil and rice malt syrup together
  6. When it begins to thicken, and the ingredients have mixed together, pour the mixture on top of the banana mix in the muffin trays
  7. Place in the freezer for 3 hours
  8. Slowly pull the cheesecakes out of the muffin tins and top with fresh banana and cacao powder sprinkled on top
  9. Enjoy!
