Green Vege Soba Noodle Salad

Ingredients

  • 100 grams of uncooked soba noodle
  • 1 large bunch of green beans
  • 1 zucchini chopped long ways
  • 3 cloves of garlic
  • 1 tablespoon of soy
  • 1 knob of ginger
  • 1 tablespoon of sesame oil
  • 1 handful of sunflower seeds

Instructions

  1. Wash and chop the stalks off the beans, chop zucchini longways
  2. Get a large fry pan and with the sesame oil, fry up the garlic and grated ginger
  3. Boil the soba noodles as suggested on the packet
  4. Add in the vege's to the garlic and put to medium heat, make sure to toss them so they don't burn
  5. Once the noodles are cooked and drained, add them in and give them a toss for about 5 minutes
  6. Now that the noodles and beans have soaked up the flavour, serve them hot and serve with sun flower seeds on top for the added taste!
