Falafel Salad


  • 1 cup dried chickpeas
  • 1 large onion, chopped
  • 2 cloves of garlic, chopped
  • 3 tablespoons of fresh parsley, chopped
  • 2 tablespoons flour
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • Salt
  • Pepper
  • Oil for frying
  • 1 large handful of beans


  1. Put the chickpeas in a bowl and cover them with cool water, soaking overnight. If you used canned beans you wont have to do this
  2. Drain the chickpeas and put them into a pot with fresh water, boil
  3. Keep boiling for about 5 minutes and then simmer for about an hour
  4. Drain them and let them cool for about 10 minutes
  5. Put together the chickpeas, onion, garlic, cumin, flour, pepper and salt in a bowl
  6. Combine (mash or blend) all the ingredients until they forma thick paste.
  7. Form the mixture into small sized balls
  8. Fry the balls in olive oil until brown
  9. For the bean salad, simply lightly fry the beans
