Organic Vegetable Scramble


  • 2 organic and free range eggs
  • 2 tablespoons of water
  • 1 chopped onion
  • 1 chopped capsicum
  • 2 cloves of garlic, chopped
  • 2 tablespoons of turmeric
  • 1 bunch of rocket or salad of your choice
  • Juice of 1 orange
  • 1 table spoon of olive oil
  • Salt and pepper to garnish


  1. Crack the 2 eggs into a bowl and add the water and tumeric. Whisk untill smooth
  2. Chop the garlic, onion and capsicum, oil the pan, throw them in and fry
  3. Once brown, turn down to medium heat and pour in the egg mixture
  4. Once the egg mixture starts bubbling, turn the omelette over, or scramble.
  5. Once cooked through take out of pan
  6. Make a bed of salad and squeeze orange juice over generously
  7. Pour over the olive oil before placing egg and vege mix on top
  8. Add desired herbs (I added basil)
  9. Enjoy!
