Roast Vege Salad with Cumin, Turmeric, Dates, Walnuts and  Fennel

Ingredients

  • 2 Sweet Potato
  • 2 Carrots
  • 1 Beetroot
  • 2 cloves of Garlic
  • 8 Dates
  • 1/3 cup of Walnuts
  • 3 tablespoons of Soy Sauce
  • 1Tablespoon of Cumin
  • 1Tablespoon of Turmeric
  • 1Teaspoon of Fennel seeds

Instructions

  1. Turn the oven on to fanbake at 180 degrees
  2. Chop up the vegetables and boil them untill slightly soft, then drain (alternative to suggested vegetables you could use any root vegetable in season)
  3. Add the (chopped) dates, garlic, and walnuts and lightly fry with your chosen oil
  4. Add in the soy sauce
  5. Sprinkle the turmeric, cumin and fennel throughout the drained vegetables
  6. Add the garlic, dates and soy sauce mix and stir
  7. Pop in the oven for around 15 minutes or until slightly crunchy
  8. Serve!
